Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3 cups old-fashioned rolled oats
  • 1/2 teaspoon salt

Method

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, combine the all-purpose flour, baking soda, and salt. Gradually blend this into the sugar mixture.
  5. Stir in the rolled oats until just combined.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between each cookie.
