Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups old-fashioned oats

Method

  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan with butter or non-stick cooking spray.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and creamy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually blend this into the butter mixture.
  5. Stir in the oats until just combined. Spread the dough evenly into the prepared pan.
  6. Bake for 18-20 minutes, or until the edges are golden and the center is set. Do not overbake.
  7. Allow to cool completely in the pan on a wire rack before cutting into bars.
