Cardamom Vanilla Skyr Panna Cotta

This panna cotta combines the creamy tang of Icelandic skyr with the delicate flavors of cardamom and vanilla. It's an elegant yet effortless dessert that celebrates the freshness of spring. Serve it with a scattering of fresh berries for a burst of color and flavor.

Ingredients

  • 200 ml heavy cream
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cardamom
  • 1 teaspoon vanilla extract, preferably from a specialty producer
  • 1 1/2 teaspoons powdered gelatin
  • 3 tablespoons cold water
  • 200 g vanilla skyr
  • Fresh berries, for serving

Method

  1. In a small bowl, sprinkle the gelatin over the cold water and set aside to bloom for about 5 minutes.
  2. In a saucepan, combine the heavy cream, sugar, and cardamom. Heat over medium heat, stirring occasionally, until the sugar dissolves and the mixture is hot but not boiling, about 5 minutes.
  3. Remove the cream mixture from the heat and stir in the vanilla extract. Add the bloomed gelatin and whisk until completely dissolved.
  4. Allow the mixture to cool slightly before gently whisking in the vanilla skyr until smooth.
  5. Pour the mixture into four small ramekins or dessert glasses. Cover and refrigerate until set, at least 3 hours or overnight.
  6. Before serving, top with fresh berries. Serve chilled.
