Baked Salmon with Summer Vegetables

This easy baked salmon recipe is perfect for summer, highlighting the fresh flavors of seasonal vegetables. Quick to prepare, it's ideal for a healthy weeknight dinner.

Ingredients

  • 4 salmon fillets, about 6 oz each
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 2 cups cherry tomatoes, halved
  • 1 large zucchini, sliced
  • 1 tablespoon lemon juice
  • Flaky sea salt, to taste
  • Ground black pepper, to taste

Method

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place the salmon fillets on the prepared baking sheet. Drizzle with olive oil and sprinkle with smoked paprika, salt, and pepper.
  3. Arrange the cherry tomatoes and zucchini slices around the salmon on the baking sheet. Drizzle with remaining olive oil, lemon juice, salt, and pepper to taste.
  4. Bake in the preheated oven for 15 to 20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  5. Remove from the oven. Serve the salmon and vegetables warm, garnished with additional lemon juice if desired.
