Baked Ham with Roasted Vegetables

Ingredients
- 1 bone-in ham, about 5 pounds
- 1/4 cup honey
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 2 pounds baby potatoes, halved
- 1 pound carrots, peeled and cut into 1-inch pieces
- 1 pound green beans, trimmed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- Flaky sea salt, to taste
Method
- Preheat your oven to 325°F.
- In a small bowl, mix honey, Dijon mustard, and apple cider vinegar. Set aside.
- Place the ham in the center of a large baking sheet. Score the surface and brush with the honey-mustard mixture.
- In a separate large bowl, toss baby potatoes, carrots, and green beans with olive oil, garlic powder, black pepper, and flaky sea salt.
- Arrange the vegetables around the ham on the baking sheet.
- Roast in the preheated oven for about 90 minutes, or until the ham reaches an internal temperature of 140°F and the vegetables are tender.
