Baked Ham with Roasted Vegetables

Ingredients

  • 1 bone-in ham, about 5 pounds
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 pounds baby potatoes, halved
  • 1 pound carrots, peeled and cut into 1-inch pieces
  • 1 pound green beans, trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • Flaky sea salt, to taste

Method

  1. Preheat your oven to 325°F.
  2. In a small bowl, mix honey, Dijon mustard, and apple cider vinegar. Set aside.
  3. Place the ham in the center of a large baking sheet. Score the surface and brush with the honey-mustard mixture.
  4. In a separate large bowl, toss baby potatoes, carrots, and green beans with olive oil, garlic powder, black pepper, and flaky sea salt.
  5. Arrange the vegetables around the ham on the baking sheet.
  6. Roast in the preheated oven for about 90 minutes, or until the ham reaches an internal temperature of 140°F and the vegetables are tender.
  7. Let the ham rest for 10 minutes before slicing. Serve with the roasted vegetables.
